When you need something sweet to wish luck to family and friends these Shamrock Rice Krispie Treats are just the thing to whip up.
Rice Krispie treats are a classic for a reason, they are buttery, sweet, crunchy, and very addicting! Add a little festive holiday flair to create these Shamrock Rice Krispie Treats and you really have a winner! They are pinch proof and oh so easy to make. You only need a fun shamrock shaped cookie cutter, 5 ingredients, and about 20 minutes to make this fun St. Patrick’s Day dessert idea.
Shamrock Rice Krispie Treats Recipe
Makes approximately 10-12 Shamrocks
Ingredients:
- 6 cups Rice Krispies Cereal (off-brand works fine too!)
- 10 ounces mini marshmallows
- 3 tablespoon butter, cut into chunks
- Green gel food coloring
- White frosting
Additional tools needed:
- 3″ Shamrock cookie cutter (We used the middle size shamrock in this set)
- Tinfoil or wax paper
- Non-stick cooking spray
- Small sandwich baggy
- 9×13 pan
Directions:
- Line a 9×13 pan with tinfoil or wax paper. If using tinfoil, spray with non-stick cooking spray.
- Add the mini marshmallows and butter to a large saucepan and heat on low/medium heat, stirring occasionally. Once the mixture is about 1/2 melted, add several drops of green gel food coloring.
- Fold in the 6 cups of Rice Krispie cereal.
- Pour the mixture into the prepared pan and gently press down evenly.
- Allow the treats to set prior to cutting.
- If you are pressed for time, place the treats in the fridge for 20 minutes to firm them up.
- Line a separate baking sheet with wax paper.
- Using the shamrock cookie cutter, cut the treats as close together as possible and place them on the prepared baking sheet.
- Heat the white frosting in the microwave for 10-15 seconds. You don’t want it liquidy but you do want it soft enough to drizzle over the treats.
- Scoop a few spoonfuls of the frosting into the sandwich baggy and make a small snip in the corner.
- Gently squeeze the frosting from the bag over the shamrocks going in a back and forth motion.
12. Repeat with all shamrocks.
