Tender slices of beef mingle with soft cabbage and those perfect little red potatoes that soak up all the savory flavors. While it’s often tied to St. Patrick’s Day celebrations, this classic dish deserves a spot at the table any time of year when you crave an easy, soul-warming meal. So pick up an extra package or two of corned beef while it is on sale in March and freeze it for later.

The beauty of making it in the slow cooker? You get that melt-in-your-mouth texture with almost very little effort. Just layer in the corned beef brisket, onion, garlic, and red potatoes in the slow cooker in the morning, let the magic happen low and slow all day, then add the cabbage an hour before dinnertime.

Whether you’re cooking for a crowd or just want leftovers that taste even better the next day, this easy slow cooker corned beef and cabbage recipe delivers every time. Corned Beef Spice Packet Recipe

If you don’t get a spice packet with your corned beef, you can make the spices yourself using the following spices.

Ingredients:

  • 1 bay leaf, crushed
  • 3 whole cloves
  • 20+ peppercorns
  • 20+ coriander
  • ¼ teaspoon allspice

This easy recipe for slow cooker corned beef and cabbage with red potatoes cooks low and slow while you go about your day. You just need to pop the cabbage in an hour before you are ready to serve dinner.

Ingredients:

  • 3-4 pounds corned beef brisket
  • spice packet (often comes with corned beef purchase)
  • 2 pounds medium red potatoes, cut into quarters
  • 1 medium onion, quartered
  • 6 cloves of garlic
  • 2 cups of beef broth (Homemade beef broth recipe)
  • 1 head of cabbage, cut into wedges

Tools:

6 quart slow cooker

Directions:

  1. Place the corned beef brisket in the bottom of the slow cooker with the fat side up.
  2. Pour half of the beef broth over the brisket. Then sprinkle half of the spices over the brisket.

You can use the drippings to make gravy if you wish. It is easy to make and the most flavorful gravy you will ever have!

Corned Beef Gravy Recipe

Use the drippings from the Crock-Pot after cooking corned beef to make a delicious gravy.

Ingredients:

  • 1 cup Corned Beef drippings
  • 1 tablespoon cornstarch

Directions:

  1. After you have removed the meat and veggies from the slow cooker, take 1 cup of the corned beef drippings and add it to a small sauce pot.
  2. Use a whisk to blend the cornstarch into the drippings.
  3. Cook on medium-low heat until it reaches a boil.
  4. Lower flame and boil until it thickens, approximately 2 – 3 minutes.

Crock-Pot Corned Beef and Cabbage Recipe with Red Potatoes

Ingredients

  • 3-4 pounds corned beef brisket
  • spice packet (often comes with corned beef purchase)
  • 2 pounds medium red potatoes (cut into quarters)
