S’more Ice-Cream Parfait

Looking for an alternative to the traditional S'more? Try this quick and easy S'more parfait recipe with ice cream, bananas, marshmallows and chocolate.

This recipe makes 2 delicious S’more Parfaits. Double, triple, or quadruple it if you are feed a crowd.

Ingredients:

  • 1 Pint Ice Cream, Vanilla
  • 2 Bananas, Sliced
  • 15-20 Mini Marshmallows
  • 4 Graham Crackers, Pulsed in a food processor, and 4 Graham cracker quarters toasted
  • 1/3 Cup of Mini Chocolate Chips
  • 4 Large Marshmallows
  • 2 tbsp of Unsalted Butter
  • Marshmallow Fluff

Prep Directions:

1. Put 4 graham crackers in a food processor and pulse until there are no large pieces, set aside.

2. Toast 4 large marshmallows using a chef’s torch or place on the end of a fork and brown over the heat on the stove-top, set aside.

3. Toast four graham cracker quarters in a skillet using 2 tablespoons of unsalted butter, set aside.

4. Dice 1 large banana or two small bananas, set aside.

5. 2 tbsp of pulverized graham crackers in the bottom of a glass

6. Add a layer of mini marshmallows, mini chocolate chips and sliced bananas.
7. Add 2-3 scoops of vanilla ice cream and marshmallow fluff.
8. Sprinkle with mini chocolate chips.
9. Top with roasted marshmallows.
10. Add quartered and toasted graham crackers.

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
