Strawberry Spinach Salad

Strawberry Spinach Salad Recipe

If you have fresh spinach in your garden or at your farmers markets like I do, now is the perfect time to whip up this quick and easy low fat dressing and create a beautiful salad for your family tonight.  I especially love this salad because it is great for my picky eaters who like to say they don’t like spinach.  Adding their favorite fruit (strawberries) to the mix makes it a hit in our house every single time.  I even find the younger kids in our family asking for seconds on this one.  I have lightened a traditional balsamic dressing with less oil and created a satisfying dressing that accompanies the spinach and strawberry combination well.  Sliced almonds add a nice crunch that is high in protein and full of good for you fats.  They can be omitted to save additional calories if desired.

Strawberry Spinach Salad

Ingredients:

  • 4-5 Cups Fresh Baby Spinach
  • 7-8 Ripe Strawberries Sliced Thinly
  • ¼ Cup Sliced Almonds

Dressing Ingredients:

  • 1 Tablespoon Orange Juice
  • 1 Tablespoon Extra Virgin Olive Oil
  • 1 Tablespoon Balsamic Vinegar
  • ⅛ Cup Sugar (or Splenda)
  • 1 Tablespoon Poppy Seeds

Directions

  1. Put the spinach, strawberries and almonds in a large bow.
  2. Whisk all dressing ingredients together in small bowl and pour over spinach salad. Toss lightly and serve with grilled fish or chicken.
