Apricot Vanilla Cashew Refrigerator Oatmeal

Apricot Vanilla Cashew Refrigerator Oatmeal- This recipe is a delicious and satisfying breakfast in a jar. It pairs oats with yogurt, apricots, and cashews.

I like to eat breakfast first thing in the morning. For some reason I always wake up starving, so I never cook breakfast. I just scrounge around in my fridge until I find some edible leftovers. I love making overnight oatmeal because I can make myself a wholesome breakfast in advance. This Apricot Vanilla Cashew Refrigerator Oatmeal is one of my favorite breakfasts. It is not only delicious, but it’s also a complete meal in a jar. With protein-rich yogurt and nuts and a whole serving of fruit, it makes for a satisfying and nutritious breakfast.

Apricot Vanilla Cashew Refrigerator Oatmeal

Ingredients:

  • 1/2 cup old fashioned rolled oats
  • 1/2 cup vanilla Greek yogurt (or one single serving container)
  • 1/3 cup of your choice of milk
  • 1/4 cup diced fresh Apricots (add more to taste)
  • 2 Tablespoons chopped cashews
  • 1/4 tsp cinnamon

  1. Add the rolled oats to a mason jar or another lidded container.
  2. Add the almond milk, yogurt and cinnamon and mix with the oats.Apricot Vanilla Cashew Refrigerator Oatmeal - add almond milk and yogurt to oats
  3. Add apricots to taste. I typically dice one whole apricot so that their is no waste. You can substitute peaches or nectarines for the apricots.Apricot Vanilla Cashew Refrigerator Oatmeal - add apricots to taste
  4. Add cashews and stir until thoroughly mixed.
  5. Refrigerate for 6-8 hours. Serve cold.

I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
