This carrot cake overnight oatmeal recipe is a delicious way to start your morning!
While I love the taste of good homemade carrot cake and count it among my very favorite of desserts, the flour, milk, and sugar do not like my waistline very much. Not willing to give up my favorite flavors but looking for a healthier way to enjoy it, I started looking for ways to incorporate the ingredients in other recipes. Overnight oatmeal is an easy and tasty way to begin your morning and the mild flavor of the oats lends itself well to adding your own flavors and textures.
Overnight oatmeal was the perfect base for my new favorite Carrot Cake Overnight Oatmeal. Even the kids gobble this up and feel like I have given them dessert for breakfast (one has even requested some for dessert after supper). Dairy-free, gluten-free, and free of processed sugar, the kids and I both can indulge in a breakfast treat that is healthy and light. Cold oatmeal is also a great option for us here in Florida where we wake up temps in the upper 80’s during the summer!
Carrot Cake Overnight Oatmeal Recipe
Ingredients:
- ⅓ cup quick cook oats
- ½ cup coconut milk
- 1 carrot
- 1-2 tablespoons raisins
- 1-2 tablespoons pecans or walnuts
- ½ teaspoon vanilla extract
- 1 – 2 teaspoons raw honey to taste
Directions:
1. Grate carrot finely with a micro plane or the small side of your box grater. The finer you can make it the better the texture.2. Combine oats and coconut milk into a jar with a lid. Stir well.3. Add shredded carrot, raisins, nuts, vanilla, and honey to taste. Stir to mix.
4. Replace the lid on your jar and place the oatmeal mixture in the refrigerator overnight or at least 4 to 5 hours to absorb the liquid.
Note: While I love the flavor and thick texture of canned coconut milk, you can make this same recipe with the carton coconut milk, almond milk, or any other milk that you like to use.
