These homemade chicken pot pies are made in ramekins and the crust is made using puff pastry.

An easy Chicken Pot Pies Recipe. Enjoy this delicious comfort food and make individual chicken pot pies yourself using puff pastry for the crust.

Do you love homemade chicken pot pies? Do you think they are too hard to make them yourself? Jamie is sharing an easy way to make chicken pot pies yourself using puff pastry. This recipe is a great combination of wholesome fresh ingredients and the convenience of a flaky, pre-made crust!

How to Make Chicken Pot Pies

Use fresh chopped vegetables in your chicken pot pies recipe

In a large pot over medium heat, melt butter. Add in onion, garlic, celery and carrots until onion is translucent. Add in flour and cook for 1 minute. Gradually add in chicken broth and milk stirring constantly. Bring to a boil and then reduce heat to low. Add in chicken and peas and simmer for 5 minutes.

Use the ramekin as a guide to cut the puff pastry and make a crust for the chicken pot pies

To make the crust, cut 4 circles out of the puff pastry, large enough to cover the top of each ramekin.

Divide chicken pot pie filling between 4 ramekins

Divide the chicken pot pie filling among 4 ramekins and cover each ramekin with a puff pastry circle, pulling the pastry down over the sides.

Beat egg and water together and brush over the top of the puff pastry. 

Cut a small circle into the center of each puff pastry and bake for 35-40 minutes or until top is golden brown.

Ingredients

  • 1 Sheet Puff Pastry room temperature
  • 3 Tablespoons unsalted butter
  • 5 Tablespoons all-purpose flour
  • 1 small onion minced
  • 1 clove of garlic minced
  • 1/2 Cup celery chopped
  • 1/2 Cup carrots diced
  • 1/2 Cup peas
  • 1 1/2 Cup chicken broth
  • 1/2 Cup milk
  • 2 Cups chicken cooked and diced
  • 1 Egg
  • 1 Tablespoon water

Instructions

  • Preheat oven to 375 degrees.
  • In a large pot over medium heat, melt butter. Add in onion, garlic, celery and carrots until onion is translucent.
  • Add in flour and cook for 1 minute. Gradually add in chicken broth and milk stirring constantly. Bring to a boil and then reduce heat to low. Add in chicken and peas and simmer for 5 minutes.

    How big is a “ramekin”? I don’t have them as I don’t know what they are. Been looking for an easy , cheap pot pie recipe, for a long time. Thanks, Sincerely, Dallasemmitt
