Baked apples aren’t just for dessert! This cinnamon oatmeal baked apple recipe makes a filling breakfast.
These Cinnamon Oatmeal Baked Apples are stuffed with goodness, perfect for crisp fall mornings to start a school day, for brunch, or a lazy Sunday morning. Serve them to guests and impress them with your culinary prowess ( they really aren’t that difficult) They are hearty, full of flavor, and packed with healthy fiber making them a tasty alternative to instant oatmeal.
You can prep the Cinnamon Oatmeal Baked Apples the night before and toss them into the oven in the morning to save time. This recipe is for 4 – 6 but can easily be doubled or tripled to accommodate a morning crowd.
You can use your favorite baking apple. If you like a tart apple, use a Granny Smith, Rome. If you like a sweeter apple use Fuji, Braeburn, Pink Lady, or McIntosh. And if you like a really sweet apple you can use Red Delicious. Some of the apples are better when baked than others but it is a matter of personal preference.
If you are concerned that the apples will brown while you are prepping them, brush them with some lemon water after cutting them.
Cinnamon Oatmeal Baked Apples Recipe
Ingredients:
- 6 medium baking apples or 4 large apples
- 1 1/2 cups quick cook oatmeal
- 2 tablespoons brown sugar
- 1 teaspoon cinnamon
- 1 teaspoon apple pie spice (how to make apple pie spice)
- 1 tablespoon melted butter
Directions:
Preheat oven to 350 degrees.
Slice off top 1/2 inch of each apple.
Scoop out a small piece to mark the size your “bowl” -1/2″ down, leaving at least 1/4″ of apple on the skin so your apple will hold up. Use an apple corer or small knife to remove center or a spoon, toss the core, but keep the rest of the apple that you scoop out.
Scrape out the good portion of the apple and set aside in a bowl.
Stir oatmeal, brown sugar, cinnamon, and apple pie spice thoroughly. Stir in melted butter.
Dice the apple that was set aside. Measure 1 cup of diced apple and mix it into the oatmeal mixture.
Fill the apples with the oatmeal mixture, heaping it up on top.
Place filled apples in a baking dish and into the oven for 25-30 minutes, until apples are softened and topping is golden brown. Top with milk, cream, or maple syrup before serving if desired.
