Pencil Cupcakes

Whether your child’s class is celebrating at school or you are throwing your own back to school party at home, these pencil cupcakes will make a fun addition!

How to Make Pencil Cupcakes

These cupcakes are made with yellow cake mix  (or your favorite homemade cupcake recipe), vanilla frosting, and vanilla sugar wafers coated with candy melts. You cut one end of the sugar wafers to a point to create the point of the pencil. Pink candy melts are used to make the eraser. The edible “pencils” are placed on top of frosted cupcakes making a unique, yet easy school-themed cupcake.

Pencil Cupcake Recipe

Serves: 24

Ingredients: 
  • 1 box of yellow cake mix, any brand or your favorite cupcake recipe
  • 1/3 cup vegetable oil
  • 3 eggs
  • 1 cup water
  • 24 vanilla sugar wafers
  • 10 oz. Wilton bright pink candy melts
  • 10 oz. Wilton bright white candy melts
  • 24 Chocolate chips
  • White frosting (this is our favorite vanilla frosting recipe)

Supplies Needed:

  • White cupcake liners
  • 1M frosting tip
  • Disposable piping bag
  • Small paring knife
Directions:
  1. Preheat the oven to 350 degrees and line (2) 12 count muffin tins with cupcake liners.
  2. Combine the cake mix, vegetable oil, eggs, and water.
  3. Fill the muffin wells 1/2 full and bake for 18-20 minutes.
  4. Around 18 minutes, insert a toothpick into the cupcakes if it comes out clean the cupcakes are done.
  5. Remove the cupcakes from the oven and let cool.
  6. Line a large baking sheet with parchment paper.
  7. Take one vanilla sugar wafer at a time and gently slice both sides of the top to resemble the point of a pencil. Repeat with all the sugar wafers.

8. Pour 1/2 of the bright pink candy melts into a microwave-safe dish.
 
9. Heat in 30-second increments, stirring until melted.
 
10. Dip the bottom portion of the sugar wafer into the melted pink chocolate to resemble the pencil’s eraser and place on the parchment paper to set.

11. Pour 1/2 of the bright white candy melts into a microwave-safe dish. Heat in 30-second increments, stirring until melted.
 
12. Dip the pointed end into the white chocolate allowing the excess to drip back into the bowl.

13. Place the vanilla wafer back on the parchment paper to set for a few minutes.
 
14. While the white chocolate is setting, use the paring knife to slice the chocolate chips in 1/2. Place a chocolate chip halve on the tip of the pencil. Repeat with all the sugar wafers.

15. Attach the frosting tip to the piping bag and fill with white frosting.

16. Frost each cupcake in a circular motion and place a pencil on top of each cupcake.

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
