Pizza Egg Puffs Recipe and Pizza Dipping Sauce

My youngest son is my pickiest eater. It also seems that as soon as we identify a food he likes and stock up on it, he decides he no longer likes it. There are only a few foods that he has consistency liked: milk, cheese, pizza (mostly because of the cheese), peanut butter, crackers (with either peanut butter or cheese), asparagus, and grapes. While other mothers are making elaborate Bento lunches for their kids, I am staring into the refrigerator and trying to think of something that my kid will eat.

One of my most successful tricks to get my son to eat is to make pizza flavored dishes. Cheese, tomatoes, and a little Italian seasoning can make just about anything appetizing to my picky eater. I even stooped so low as to rename lasagna “pizza casserole” when he was little. Now that he is older, we call it by its proper name, but each time I make it I remind him, “Remember, you like this. It tastes like pizza”.

One of the lovely things about eggs is their flavor is so mild, that you can make them taste like just about anything, even pizza. I modified my egg puff recipe, to create a tasty Pizza Egg Puffs recipe that my son loves. These Pizza Puffs are an easy way to get protein in him.

While Egg Puffs are traditionally a breakfast recipe, these Pizza Puffs work well for lunch. They can be eaten with fingers like a muffin making them quite easy to pack in lunches:

Pizza Egg Puffs Recipe

Ingredients

Pizza Egg Puffs:

  • 12 large eggs
  • 16 oz. regular cottage cheese
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup pepperoni sliced, diced ( I used turkey pepperoni)
  • 1/2 cup diced tomatoes, drained well
  • 1/4 cup diced bell pepper
  • 2 green onions, thinly sliced
  • 1/4 cup cornstarch
  • 1 tablespoon Italian seasoning mix (How to make Italian Seasoning Mix.)
  • 1 teaspoon baking powder

Ingredients for Pizza Egg Puffs

Pizza Dipping Sauce:

  • 15 oz. tomato sauce
  • 2 tablespoons Italian seasoning mix
  • 2 teaspoons sugar
  • pinch of salt
  • dash of pepper

Directions:

  1. Preheat oven to 350 degrees. Grease 2 muffin tins.
  2. Whisk the eggs in a medium bowl.
  3. Add the cottage cheese, shredded cheese, pepperoni, diced tomatoes, bell pepper, and green onions to the eggs. Stir well. Add the cheese, cottage cheese, pepperoni, tomatoes, bell pepper, onion, and Italian seasoning mix to the eggs.
  4. Add the cornstarch, Italian seasoning mix, and baking powder. Mix well.
  5. Divide the batter between 24 greased muffin cups. Fill the muffin cups thre-fourths full of the Pizza egg puff mixture
  6. Bake at 350 degrees for 30 minutes.
  7. While the Pizza Egg Puffs are baking, combine the pizza dipping sauce ingredients in a saucepan. Cook over a medium heat until it begins to boil. Lower flame and simmer for 10 minutes.
  8. Once the Pizza Puffs are done baking let them sit for a few minutes, then use a butter knife to separate them from the muffin tin and gently lift them out. Cooked Pizza Egg Puff Recipe
  9. Serve the Pizza Egg Puffs with the Pizza Dipping Sauce.

Note: These egg puffs keep well in the refrigerator for up to 5 days. Reheat for 15 – 20 seconds in a microwave before serving.
