White Chocolate Dipped Oatmeal & Fruit Balls

Having a family with kids means keeping yummy snacks on deck at all times. And when those snacks are full of the good stuff, well, that makes snack time even better. I grabbed organic oatmeal, dried cranberries, chia seeds, chopped dried fruit, and even tossed in some peanut butter chips. The end result was easy and produced bite-size snacks they’ll gobble up in record time. Read on for the White Chocolate Dipped Oatmeal & Fruit Balls recipe.

These festive White Chocolate Dipped Oatmeal & Fruit Balls are sprinkled with crushed candy cane. Make this easy recipe and spread the holiday cheer!

The holidays mean the little ones will be out of school more than usual and those little crumb snatchers will be hungry. College-age kids will be home for the holidays and lots of guests (related and otherwise) will be stopping by or spending a couple of days visiting. So having lots of yummy things to eat is mandatory and there is nothing you can do about it. We created our White Chocolate Dipped Oatmeal & Fruit Balls for such food emergencies. They’re easy to make and according to our little one, they’re pretty darn good. Read on to find out how we pulled this off.

White Chocolate Dipped Oatmeal & Fruit Balls Recipe

Ingredients:

  • 1 1/4 cups organic whole oats
  • 1/2 cup extra fancy fruit cake mix
  • 1/2 cup medley raisins
  • 1/4 cup peanut butter chips
  • 1 tablespoon chia seeds
  • 1/2 teaspoon pure vanilla extract
  • 2 tablespoons chopped pistachios
  • water as needed
  • 1/2 cup of white chocolate discs
  • 1/3 cup heavy creamWhite Chocolate Dipped Oatmeal & Fruit Balls- ingredients

Directions:

  1. Combine extra fancy fruit cake mix, raisins, and pure vanilla extract in a blender or large food processor. Pulse until mixture is combined, it will have a thick paste like consistency. Scrape down the sides with a rubber spoon as necessary.
  2. Add whole oats, chia seeds, chopped pistachios, and peanut butter chips into a blender or large food processor and blend until all of the ingredients are combined. Add water a little at a time to help bind the ingredients together.   3. Roll mixture into ping-pong size balls and set them aside.
  4. Place a saucepan over med-high heat and add heavy cream.
  5. When the heavy cream begins to steam and just begins to bubble, begin adding the white chocolate discs, continue to stir until the white chocolate is melted and smooth.
  6. Remove saucepan from heat.
  7. Dip half of the balls into the melted white chocolate then dipped the white chocolate half into crushed peppermint candy cane.White Chocolate Dipped Oatmeal & Fruit Balls- dip oatmeal balls and sprinkle with crushed candy cane
  8. Serve.

Now comes the fun part. The finished snack balls get dipped into melted white chocolate and sprinkled with crushed peppermint candy canes. If that doesn't put a smile on your mug then I don't think you're really in the holiday mood.
