If you have leftover rotisserie chicken after a meal and don’t know what to do with what is left I have a delicious and easy recipe that you probably already have ingredients on hand for- Bacon and Rotisserie Chicken Quesadillas. These yummy quesadillas are a great way to use up leftover rotisserie chicken. They are so quick to pull together, filling, and if you don’t want to make them the day after you have had rotisserie chicken you can freeze the meat and pull it out an hour before you are ready to assemble. This is a great busy weeknight meal to have ready.
Bacon and Rotisserie Chicken Quesadilla Recipe
Ingredients:
- 1 1/2 cups rotisserie chicken
- 2 cups Mexican blend shredded cheese
- 4 pieces precooked bacon
- 1/2-3/4 tsp. Cumin
- 1/4 tsp. Cayenne pepper
- 4 flour tortillas
- pepper to taste
- 2 tsp. olive oil
Directions:
Chop chicken and bacon into smaller than bite sized pieces.
Toss chicken and bacon with cumin, cayenne, and black pepper to coat.
Heat olive in a large nonstick pan over medium heat.
Place tortilla open in pan, place 1/4 of the shredded cheese on half, top with chicken and bacon
Fold tortilla over and cook for 2-3 minutes until browned, flip and cook the other side for 1-2 minutes.
Remove from pan, cut into wedges and serve with sour cream, guacamole, or ranch for dipping.
