Butternut Squash, Potato, and Ham Casserole

Here’s a delicious way to use up your leftover ham. This Butternut Squash, Potato, and Ham Casserole is an easy and hearty dish.

Use up leftover ham with this delicious Butternut Squash, Potato, and Ham Casserole. It's a hearty dinner recipe topped with creamy Alfredo and breadcrumbs.

Some folks wonder what to do with butternut squash beyond the soup bowl. I created a super easy and incredibly yummy recipe, and it uses butternut squash, Yukon Gold potatoes, homemade bread crumbs, chopped parsley, Alfredo sauce and grated Parmigiano Reggiano. That’s six ingredients and one super delicious meal. But wait! What if I threw in some chopped ham. We had a ton leftover from the holidays, and I think it will work perfectly well. I think our Butternut Squash, Potato, and Ham Casserole is going to become a mainstay on your cold weather menu.

And if you planted a late fall and early winter garden this year you may just have a few butternut squash just laying around and waiting for someone like you to come along and seize the day. Carpe Diem in the kitchen is always a good thing.

Butternut Squash, Potato and Ham Casserole Recipe

Ingredients:

  • 2 cup chopped ham
  • 1 1/2 cup Yukon gold potatoes, cut into cubes
  • 1 1/2 cup butternut squash, cut into cubes
  • 1 cup parsley
  • 1 1/2 to 2 (15 ounce) jars Alfredo sauce
  • 2 cups homemade breadcrumbs
  • 1/2 cup grated Parmigiano-Reggiano
  • 2 tablespoons extra virgin olive oil
  • 1 tsp sea salt
  • 1 tsp freshly cracked black peppercornsButternut Squash, Potato, and Ham Casserole- ingredients

Directions:

  1. Preheat oven to 350 degrees.
  2. Wash, peel and cube two large Yukon Gold potatoes.
  3. Peel one large butternut squash, remove seeds and cut into cubes.
  4. Into a large casserole dish add two (2) tbsps of extra virgin olive oil.
  5. Add the potatoes and butternut squash into the casserole dish.
  6. Season potatoes and butternut squash with sea salt, and freshly cracked black peppercorns, and toss ingredients together.
  7. In a food processor add ham and fresh parsley. Pulse until the ham resembles small crumbles.
  8. Evenly distribute the ham and parsley mixture over the potatoes and butternut squash.
  9. Spoon the Alfredo sauce over the ham mixture.Butternut Squash, Potato, and Ham Casserole- spoon Alfredo sauce over casserole
  10. Clean out and dry the food processor, 3-4 slices of artisan bread and grated Parmigiano-Reggiano. Pulse until you have breadcrumbs.
  11. Scatter the breadcrumbs over the casserole evenly.
  12. Place the dish in a preheated 350-degree oven and bake for one hour.

  14. Serve hot or as a side or main dish.
