Chil Corn Dog Muffins

A quick and easy recipe for Chili Corn Dog Muffins. This kid-friendly Chili Corn Dog Muffin recipe uses cornbread mix, hot dogs, chili, and cheese.

Yes, it sounds insane doesn’t it? Chili Dog Cornbread Muffins may sound quirky and off the beaten path, but at times that is the route to creating something astonishingly delicious. Plus, in my humble opinion almost anything in muffin form is a win. And the really cool thing is, it is so easy and fun to make.

Chili Corn Dog Muffins Recipe

Here’s the low-down and what y’all need to make these lil’ babies.

Chili Dog Cornbread Cups ingredients

Ingredients:

  • 1 box of Jiffy cornbread mix
  • 3 hot dogs, sliced or chopped
  • 1 medium sized yellow onion, diced
  • 1 1/3 cup of shredded sharp cheddar cheese, divided
  • 1 tablespoon cracked black pepper
  • 1 1/2 cups of your favorite chili (store brought or made from scratch)

Additional Items:

  • Sour Cream
  • Parsley
  • Olive Oil

Directions:

1. Using a pastry brush oil muffin pan.

2. Follow directions on the Jiffy cornbread mix, then spoon the corn muffin batter into muffin tins (fill individual cupcake holes about 3/4 full).

3. Spoon in a tablespoon of chili and hotdog mixture, add 1/2 tablespoon of onion and top with shredded cheese.

4. Bake in a 350 pre-heated oven for 15-minutes.

5. Let cool and serve with a dollop of Sour Cream.
