Eggnog Truffles

If you are a big fan of Eggnog during the holidays like I am you are not going to want to miss out on these Eggnog Truffles.  Not only are they easy but incredibly tasty too!

Eggnog Truffles Recipe

These Eggnog Truffles are loaded with your favorite holiday eggnog flavor, from nutmeg to the rum flavoring! Make a batch for home and then another couple batches for cookie trays, dessert buffets, and holiday parties.

Eggnog Truffles Recipe

Ingredients:

  • 12-ounce bag Wilton white chocolate melts (or white chocolate almond bark), divided
  • 1 1/2 Tablespoons eggnog
  • 4 ounces cream cheese (1/2 block), softened
  • 1/2 teaspoon rum extract
  • 1/2 cup powdered sugar
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg plus more to garnish

Directions:

1.   Line a cookie sheet with parchment paper and set aside.
2.   Add the softened cream cheese, powdered sugar, cinnamon, nutmeg and rum extract to a medium mixing bowl.  With an electric mixer, mix on medium speed until completely blended and smooth. Set aside.Whip the cream cheese to make the eggnog truffles
3.   Add 2/3 cup of the white chocolate melts and the eggnog to a microwave safe bowl.  Microwave at 50% power for one minute. Remove from microwave and stir until completely melted and smooth. Since all microwave wattages are different, you may have to microwave for an additional 20-30 seconds until the chocolate is completely melted. Fold the melted chocolate into the cream cheese mixture.
Fold the melted white chocolate into the eggnog truffles mixture
4.   Place bowl in the freezer for 15 minutes or until the mixture has firmed up for easier handling.
5.   Roll the truffle dough into 1 inch balls and place on the parchment lined cookie sheet.  Place in refrigerator for 15 minutes to allow to harden.  (Rolling the dough into balls with your hands will soften the dough quite a bit).
6.   Melt the remaining white chocolate melts in the microwave at 50% power for one minute (or more, if needed). Remove from microwave and stir until completely melted.
7.   Dip each truffle ball into the melted white chocolate and place back on the lined cookie sheet.  Immediately, sprinkle ground nutmeg on top of each eggnog truffle.
Coat the eggnog truffles in melted white chocolate then sprinkle with nutmeg
8.   Chill for 30 minutes to allow the white chocolate coating to completely harden.
9.   Store in an airtight container in the refrigerator for up to one week. Serve eggnog truffles at your next party in a festive dish or package them up and give them as a gift to friends and neighbors.

    Softer than buttercream icing, impossible to roll into balls. 2 hrs in freezer. Made soft centered chocolates instead. Tasted great!

    My mixture is very soft and impossible to roll into balls. What did I do wrong? How can I fix it?

      Put it in the freezer and allow it to firm up more.

      Yes I used spiced rum instead of extract. Same amount as receipe
