Roasted Acorn Squash Seeds are delicious and make a healthy snack. You can season your roasted acorn squash seeds with a variety of different spices. To decide how to season your squash seeds, think about your favorite flavor combinations of roasted nuts, crackers, and chips for inspiration. The possibilities are endless. One of my favorite seasonings to use is Cajun Seasoning Mix. I also enjoy using Pumpkin Pie Spice Mix when roasting squash seeds.

You can also use this method to roast spaghetti squash seeds and butternut squash seeds.

5 Seasoning Ideas for Acorn Squash Seeds

  • 1 teaspoon Cajun Seasoning Mix Recipe
  • 1 teaspoon Pumpkin Pie Spice Mix Recipe and 1 teaspoon sugar
  • 1 teaspoon Chipotle Seasoning Mix Recipe
  • 1 teaspoon Sea Salt
  • 1/2 teaspoon Garlic Powder  and 1/2 teaspoon Onion Powder

Roasted Acorn Squash Seeds Recipe

Last weekend I cubed several acorn squashes to make roasted acorn squash with rosemary. I saved the seeds and then made Chipotle Seasoned Acorn Squash Seeds.

Ingredients:

  • 3/4 – 1 cup acorn squash seeds, rinsed and dried
  • 1 teaspoon oil
  • 1 teaspoon of your favorite spices or seasoning mix

Directions:

When you remove the seeds from your acorn squash, place them in a colander. Run the seeds under water and remove the pulp from the seeds.

Rinse the acorn squash seeds in a colander to seperate the pulp from the seeds

Pat the seeds dry or place them on a towel and allow them to air-dry overnight.

Drying Acorn Squash Seeds before roasting the squash seeds

Preheat oven to 300 degrees.

Place acorn squash seeds on a cookie sheet. Pour 1 teaspoon oil over the squash seeds and toss to coat. Sprinkle 1 teaspoon of your favorite spices over the acorn squash seeds and toss to evenly coat.

Season Acorn Squash Seeds with your favorite spices before roasting the squash seeds

Spread the acorn squash seeds evenly over a cookie sheet. Roast for 15 minutes or until the seeds are brown and crunchy.

    I rinsed them and then sprayed some olive oil on a baking sheet. Added the seeds along with garlic powder, cayenne pepper, Spanish paprika, sprayed some more olive oil and stirred it all together and toasted them in a 350• oven stirring frequently.

    This is so funny, that I came across your post. I was just asking myself if you could roast the seeds of acorn squash like you can pumpkin. Then I came on PInterest to find ways to cook my squash, and found your post!! So amazing! I am definitely going to be giving this a try now! So glad I saved my seeds! 🙂
