Lemon Meringue Rice Krispie Treats
These lemon-flavored Rice Krispie Treats are an easy no-bake dessert recipe.
Ingredients:
- 6 cups Rice Krispies cereal
- 3 tablespoons salted butter
- 4 cups miniature marshmallows
- 3 tablespoons powdered lemonade mix
- 1 ounce marshmallow creme (I used KRAFT Jet-Puffed)
- yellow Lemon Nerds candy
- Non-stick cooking spray
Note: Nerds often come in packages with two flavors – one on each side. If you can’t find a box with just the lemon, look at candy stores that may have single flavor packaging instead.
Additional Materials:
- 8×8 baking pan or cookie sheet
- Ziploc bag or icing bag
Directions:
- Coat the bottom and sides of an 8×8 inch baking pan with non-stick cooking spray.
- Melt butter in a large saucepan.
- Add mini marshmallows to saucepan and stir until melted.
- Remove from heat.
- Add lemonade powder to the melted marshmallows and stir to combine.
- Add Rice Krispies cereal to the marshmallow mixture and stir until all cereal is coated.
- Pour the mixture into a baking pan. Use a piece of wax paper to press the cereal mixture down firmly (this keeps your spoon or spatula from sticking to the cereal mixture).
- Allow treats to cool completely.
- Place the marshmallow creme into a Ziploc bag or icing bag and cut a small hole in the corner of the bag.
- Pipe the marshmallow creme onto the top of the treats in a zig-zag or desired pattern.
- Sprinkle with yellow lemon-flavored Nerds candy.
