Lemon Meringue Rice Krispie Treats

Lemon Meringue Rice Krispie Treats- These chewy, lemon-flavored Rice Krispie treats are fun and easy to make. Kids and adults alike with enjoy this recipe!

You may think cereal treats are just for kids, but this recipe for Lemon Meringue Rice Krispie Treats is a perfect choice for sharing with anyone.  They are so delicious and upscale for a cereal treat that they could even be served at a dinner party.  Of course, your kids will love these treats. But since they have the classic lemon flavor you know and love, they will also be a hit with the adults.

Making these Lemon Meringue Rice Krispie Treats is a great activity to do with your kids.  They will love watching the marshmallows melt down, mixing in the cereal, and of course licking the spoon!

Lemon Meringue Rice Krispie Treats

Ingredients: 

  • 6 cups Rice Krispies cereal
  • 3 tbs. salted butter
  • 4 cups miniature marshmallows
  • 3 tbs. powdered lemonade mix (I used 4C brand)
  • 1 oz. marshmallow creme (I used KRAFT Jet-Puffed)
  • yellow Lemon Nerds candy
  • Non-stick cooking spray

Note:  Nerds often come in packages with two flavors – one on each side.  If you can’t find a box with just the lemon, look at candy stores that may have single flavor packaging instead.

Additional Materials:

  • 8×8 baking pan or cookie sheet
  • Ziploc bag or icing bag
Directions: 
  1. Coat the bottom and sides of an 8×8 inch baking pan or cookie sheet with non-stick cooking spray.
  2. Melt butter in a large saucepan.
  3. Add mini marshmallows to saucepan and stir until melted.
  4. Remove from heat.
  5. Add lemonade powder to the melted marshmallows and stir to combine.
  6. Add Rice Krispies cereal to the marshmallow mixture and stir until all cereal is coated.
  7. Pour mixture into baking pan or cookie sheet.  Use a piece of wax paper to press the cereal mixture down firmly (this keeps your spoon or spatula from sticking to the cereal mixture).
  8. Allow treats to cool completely.
  9. Place the marshmallow creme into a Ziploc bag or icing bag and cut a small hole in the corner of the bag.
  10. Pipe the marshmallow creme onto the top of treats in a zig zag or desired pattern.
  11. Sprinkle with yellow lemon flavored Nerds candy.

  3. Add 4 cups mini marshmallows and stir constantly until melted.
  4. Remove from heat.
  5. Add 3 tbs of the lemonade powder to your melted marshmallows and stir to combine.
  6. Add 6 cups Rice Krispies cereal to the marshmallow mixture and stir until all the cereal is coated.
  7. Turn that mixture out into your baking pan and use a piece of wax paper to press the cereal mixture down firmly.
  8. Allow your treats to cool completely.
  9. Place your marshmallow creme into the Ziploc bag and cup a very small hole from one corner of the bag.
  10. Pipe the marshmallow creme onto your treats as shown.
  11. Sprinkle with yellow lemon Nerds candy.
