Salted Caramel Rice Krispies with Pumpkin Fudge Topping

Salted Caramel Rice Krispies with Pumpkin Fudge Topping Recipe - These quick and easy rice krispie treats are made with pumpkin, caramel, and chocolate.

These Salted Caramel Rice Krispies with Pumpkin Fudge Topping are amazing!  What more could you ask for when you have all of these favorite items together in one place?  Rice Krispies are a childhood favorite, but the addition of some salted caramel, pumpkin, and chocolate make this recipe one that will have you fighting the kids for the next treat.  In fact, these are officially grown up Rice Krispie treats that are upscale and classy enough to share at a work potluck, dinner party, or at your next friend’s birthday party.

Salted Caramel Rice Krispies with Pumpkin Fudge Topping

Ingredients:

  • 1 package mini marshmallows
  • 3 tablespoons salted butter
  • 6 cups Rice Krispies cereal
  • 1/3 cup salted caramel sauce
  • 1 1/2 cups semisweet chocolate chips
  • 3 tablespoons pumpkin puree
  • 1/2 teaspoon pumpkin pie spice
  • non-stick spray

Salted Caramel Rice Krispies with Pumpkin Fudge Topping

Directions:

  1. In a medium saucepan, melt butter.
  2. Add marshmallows to butter and continue melting over medium heat.  Stir constantly to prevent burning.
  3. Once marshmallows are mostly melted, add in salted caramel sauce and stir to blend.
  4. Pour Rice Krispies cereal into large bowl.
  5. Pour caramel marshmallow mixture over cereal and stir until well coated.
  6. Spray cook sheet with non-stick spray.
  7. Press marshmallow mixture into cookie sheet and spread with spatula until smooth and even.Salted Caramel Rice Krispies with Pumpkin Fudge Topping steps
  8. In a medium saucepan, heat pumpkin puree, pumpkin pie spice and chocolate chips until chocolate has melted.
  9. Remove pumpkin and chocolate puree from heat and pour over cereal treats.  Spread evenly.
  10. Allow to cool and cut into serving sizes.

Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
