This tasty combo of balsamic vinegar and roasted broccoli is sure to be a favorite with the whole family. So give this Roasted Balsamic Broccoli recipe a try and watch it become part of your weekly menu rotation.

Roasted Balsamic Broccoli

Ingredients:

  • 4 cups fresh or frozen broccoli florets
  • 3 T. balsamic vinegar
  • 2 T. extra virgin olive oil
  • 1 tsp. sea salt
  • 1 tsp. black pepper
  • 1 tsp. garlic salt
  • Optional: Parmesan cheese

Directions:

1. Preheat oven to 450°.

2. Stir broccoli, balsamic vinegar, olive oil, salt, pepper, and garlic salt in a large bowl until thoroughly combined.

3. Spread broccoli onto a large baking sheet.

4. Roast for 20 minutes or until the edges begin to singe and blacken, stirring once on pan halfway through.

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
