This is a hearty steak and potato soup that you can eat with a fork and a spoon, and is the result of a rainy afternoon that called out for soup. My husband would eat steak and homemade mashed potatoes every night of the week if he could, but I wanted something a little different, a new way to combine steak and potatoes, and after rifling through the fridge and cabinets this is what I came up with, and it is now one of his favorite dishes. 15 minutes to pull this soup together and its ready to simmer away, melding flavors and tenderizing carrots and potatoes for a wonderful flavor combination.
Ingredients:
- 2 cups steak
- 3-4 medium russet potatoes, rough chopped
- 1 cup carrots, chopped or sliced into coins
- 10 oz. can diced tomatoes
- 3 cups beef broth (How to Make Beef Broth)
- 1 small onion, diced
- 2-3 cloves garlic, crushed
- 1/4 cup grated Parmesan cheese
- 1 tsp. Oregano
- salt and pepper to taste
Directions:
Use leftover or prepare steak- grill, broil, or pan fry. Dice into bite sized pieces.
In a large soup pot sauté olive oil, garlic and diced onion, until golden brown.
Add potatoes, and cook for a few minutes.
Stir in carrots, steak, diced tomatoes, broth, oregano, salt and pepper- simmer over low for 45 minutes.
Add grated parmesan cheese.
