Valentine's Day Cut Out Cookies Recipe

How do you spell LOVE? Why with this Valentine’s Cut Out Cookies Recipe of course! Use small alphabet cookie cutters to send special messages to your family. We have spelled LOVE with our cookie cutters, but you can spell whatever special words you want to share with your family and friends. Everyone from the kids to the hubby will love the flavor and the sentiment behind these adorable cookies.

This cut out cookie recipe is a variation on a Linzer Cookies Recipe. While classic Linzer cookies use almond flour, our recipe uses ground pecans. Linzer cookies are made with two cookies with jam spread between them. The top cookie usually has a round cut out (called the Linzer Eye) where you can see the jam that is sandwiched between the cookies. We have opted to use alphabet cookie cutters instead of using nested round cookie cutters to create our Linzer Eye.

Substitutions:

Jam – You can use whatever flavor of jam you like. We used cherry jam, but raspberry jam or strawberry jam would also work well in Valentine’s Day cookies. You can also use Nutella as we did in our Nutella-Filled Heart Sugar Cookies.

Pecans – We’ve used ground pecans, but you can use ground almonds if you wish.

Valentine’s Day Cut Out Cookie Recipe

Servings: 24 cookie sandwiches

Ingredients:

  • ½ cup butter room temperature
  • ½ cup Sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • ¾ cup ground pecans
  • 1 ½ cup flour
  • ½ teaspoon cinnamon
  • pinch of salt
  • Cherry Jam
  • Powdered sugar for garnish

Supplies Needed:

  • Round cookie cutter
  • Small letter-shaped cookie cutters

Instructions:

  1. Preheat the oven to 350 degrees.
  2. Cream together the butter and sugar until smooth.

  4. In a mixing bowl, combine the ground pecans, flour, cinnamon, and salt. Stir to until thoroughly combined.
  5. Add the dry ingredients into the wet mixture, and beat on high until just combined.valentines cookie recipe
  6. Separate the dough into two sections, wrap each in plastic wrap, and place the dough in the freezer for about 30 minutes. This will make it easier to handle.
  7. Remove one half of the dough from the freezer, and roll it out to about ¼ of an inch thick on a well-floured surface.
  8. Use a round cookie cutter to cut out individual cookies.
  9. Place those cookies on a parchment-lined baking sheet, and bake for 10-12 minutes until crisp and golden brown. Valentine's Day Cookie Recipe
  10. While that batch of cookies is baking, roll out the other half of the dough, and use a round cookie cutter to cut out individual cookies again.
  11. This time, use small letter-shaped cookie cutters to cut out the shapes of different letters in the center of the round cookies. You can spell out any Valentine’s themed words or phrases that you like.
  12. When the first batch of cookies has finished baking, place the cookies with the letter cut-outs onto the lined baking sheet, and bake them for 10-12 minutes.   13. Cool all of the cookies completely, and then place a thin layer of cherry jam on the solid round cookies.jam in cookies

  15. Sprinkle the cookies with a layer of powdered sugar for garnish and serve immediately, or store in an airtight container.
