Beef, Barley, and Dried Cherry Crostini

Beef, Barley, and Dried Cherry Crostini- Treat guests to these beef crostini for your next party or special event. They're an easy and flavorful appetizer!

I love making finger food, and one of my favorites are crostini. The possibilities are endless! Just grab a loaf of Italian or French bread and explore your palette to your heart’s content. Let me introduce you to one of my favorite crostini creations. The Beef, Barley, and Dried Cherry Crostini has got flavor coming out of its foodie pores and then some. I used ground beef (because that’s all I had on hand), but I typically use chopped steak. I added barley and dried cherries and topped the whole crostini with shaved goat cheese. Pretty yum is all I am going to say. Check out the recipe below.

Beef, Barley, and Dried Cherry Crostini

Ingredients:

  • 1 Italian bread (or French)
  • 1 pound of lean ground beef (or chopped steak)
  • 1/2 cup pearl barley
  • 1/3 cup dried cherries
  • 1 medium sweet onion, sliced
  • 1/4 cup shaved goat cheese
  • 4 – 5 Tbsp unsalted sweet cream butter
  • Extra Virgin Olive Oil
  • sea salt or Kosher salt to taste
  • freshly cracked black pepperBeef, Barley, and Dried Cherry Crostini- ingredients

Directions:

  1. Prepare pearl barley according to package directions then set aside.
  2. Brown ground beef (or chopped steak), drain off excess grease, and set aside.
  3. Shave or grate goat cheese, set aside.
  4. Caramelize sliced onions.
  5. Butter 2-inch slices of Italian bread. In a skillet over med-high heat toast bread until golden brown. On a large platter, arrange slices of toasted bread and drizzle with EVOO.
  6. In a medium-size bowl, combine browned ground beef, pearl barley, caramelized onions and dried cherries. Toss mixture together and spoon onto toasted bread.
  7. Top with shaved goat cheese.
  8. Serve.
