Salted Caramel Rice Krispies with Pumpkin Fudge Topping
Ingredients:
- 1 package mini marshmallows
- 3 tablespoons salted butter
- 6 cups Rice Krispies cereal
- 1/3 cup salted caramel sauce
- 1 1/2 cups semisweet chocolate chips
- 3 tablespoons pumpkin puree
- 1/2 teaspoon pumpkin pie spice
- non-stick spray
Directions:
- In a medium saucepan, melt butter.
- Add marshmallows to butter and continue melting over medium heat. Stir constantly to prevent burning.
- Once marshmallows are mostly melted, add in salted caramel sauce and stir to blend.
- Pour Rice Krispies cereal into large bowl.
- Pour caramel marshmallow mixture over cereal and stir until well coated.
- Spray cook sheet with non-stick spray.
- Press marshmallow mixture into cookie sheet and spread with spatula until smooth and even.
- In a medium saucepan, heat pumpkin puree, pumpkin pie spice and chocolate chips until chocolate has melted.
- Remove pumpkin and chocolate puree from heat and pour over cereal treats. Spread evenly.
- Allow to cool and cut into serving sizes.
