Scotcheroos Peanut Butter Rice Krispie Treats

Scotcheroos Peanut Butter Rice Krispie Treats combine the flavor of Scotcheroos with the ease of making Rice Krispie Treats.

Scotcheroos are made with Rice Krispies, peanut butter, chocolate chips, and butterscotch chips. Like Rice Krispie Treats, Scotcharoos are a no-bake bar recipe. The difference is Scotcheroos are made by heating corn syrup and sugar to boiling and Rice Krispie Treats are made by melting marshmallows. Using marshmallows saves you time. The end result in both recipes is a delicious dessert that everyone loves.

My friend Brenda shared her Peanut Butter Rice Krispie Treats recipe with me many years ago and I think of her every time I make it. The cool thing is she topped the Peanut Butter Rice Krispie Treats with melted butterscotch chips and chocolate chips, so the flavor tastes just like Scotcharoo Bars. But you don’t have to use any corn syrup to make this version of Rice Krispie Scotcheroos.

While marshmallows are often made with corn syrup, you can find marshmallows made without corn syrup at your local health food store or you can buy Dandies Marshmallows online.

When I have a large crowd I usually make several desserts. I often include these Scotcheroos Peanut Butter Rice Krispie Treats in my dessert buffet, because I can make this dish gluten-free and even dairy-free with only minor substitutions, and without altering the flavor or the texture.

Scotcheroos Peanut Butter Rice Krispie Treats Recipe

An easy Scotcheroos recipes made without corn syrup.

Ingredients:

  • 1/2 cup butter (or dairy-free margarine)
  • 40 large marshmallows (or 4 cups of miniature marshmallows)
  • 1 cup peanut butter
  • 6 cups Rice Krispies (or gluten-free puffed rice cereal)
  • 1 cup chocolate chips
  • 1 cup butterscotch chips

Directions:

1. Grease a 9×13 pan.

2. Add the butter, marshmallows, and peanut butter to a large pot.

3. Cook over a medium flame, stirring regularly until the marshmallows are melted.

4. Remove the pot from the heat and stir in the Rice Krispies.

5. Spread the mixture out immediately in the greased 9 x 13 pan.

6. Add the chocolate chips and butterscotch chips to a saucepan. Cook over a low heat, stirring constantly until melted.

7. Spread the melted chips on top of Rice Krispie treats.

8. Place the Rice Krispie treats in the refrigerator until the topping has hardened. Then slice into squares and serve.

    Holy smokes ~ these disappeared so fast!! Thank goodness they’re easy to make! I’ve been looking for dessert recipes for my husband who needs to be GF. He was craving Scotcharoos and I wanted one without corn syrup – this recipe was ~*perfect*~! The entire pan disappeared!
