When I was a child, my mom grew some asparagus and I remember how disappointed I was when I found out it takes years for asparagus to mature for harvesting. I was fascinated that it was like a thick piece of grass. I have always loved asparagus.

The way that most people eat asparagus is either roasted or boiled, but there are so many other ways to enjoy asparagus, so I have picked 15 asparagus recipes that use it in a variety of ways. First, let’s look at how to freeze asparagus because it is so much less expensive in season and it is worth it to stock up and freeze.

How to Freeze Asparagus

Asparagus is best frozen after blanching so it can keep its great flavor without continuing to ripen in the freezer. To blanch it, simply bring some water to a boil and then dunk your asparagus into it for a few minutes. You don’t want to fully cook it, just kind of “shock” it. Have a bowl of ice water nearby so you can remove it from the heat and cool it very quickly so it stops the cooking process. When it is cooled, cut it into pieces and freeze on a single layer cookie sheet before placing in a bag.
