Fauxjito Popsicles

Fauxjito Popsicles- Here is a recipe that's perfect for summer! These mojito inspired popsicles combine the flavors of lime and mint and are alcohol-free.

Hot summer days mean delicious, dripping ice cream cones and popsicles for the kids. But sometimes mom needs a yummy treat too (since these are alcohol-free they are good for kids too).  These Fauxito Popsicles have a grown up flavor that really cools you down and allows you to treat yourself to a tasty indulgence!  Mint and lime are a great pairing for summer and honey sweetens it up naturally. Go for the raw unfiltered honey and reap the health benefits as well!

Fauxjito Popsicles

Ingredients:

  • 1 can coconut water
  • 1 lime, large
  • 1/2 cup water
  • 2 T. raw honey
  • 2 sprigs fresh peppermint
  • Optional: 3 drops peppermint essential oil in place of the fresh peppermint

Directions:

  1. You can either add mint infused water to flavor your popsicle or a pure therapeutic quality peppermint essential oil to your popsicles.  If you wish to use fresh mint simply bring your 1/2 cup of water to a boil, add peppermint sprigs, remove from heat and allow to steep for 5 minutes.Fauxjito Popsicles mint
  2. Squeeze lime well to get all the juice you can from it. Heat in microwave for 25 seconds then roll firmly on the counter. This will help release every bit of juice from the lime.Fauxjito Popsicles juicing lime
  3. Stir together lime juice, coconut water, honey, and infused mint water together until well mixed . You can also substitute a couple drops of your favorite trusted therapeutic grade mint essential oil in place of fresh leaves.
  4. Pour into popsicle molds, at this point I like to add a small wedge of lime and 1 mint leaf to make it pretty and infuse a bit more flavor, leave them large so they are easy to remove as the popsicle is eaten.
  5. Freeze until solid.
