This raspberry and blueberry popsicles recipe is proof that kids will willingly consume fruit!
My kids love frozen fruit. I can freeze grapes or berries and then serve them while still frozen to my kids and they will gobble them up. I am not sure what the makes frozen fruit more appealing than fresh fruit – maybe the texture? But I am not going to challenge something that works. Instead, I am going to capitalize on it!
Last summer, I discovered that I can add fruit to my kids’ popsicles. Not only do they not complain about the addition of fruit, they think it is delicious. So I have done quite a bit of experimenting with fruit popsicles. The small size of blueberries and raspberries makes them an easy addition to popsicles. Just wash them and toss them in – no slicing or dicing required to make them fit in the popsicle mold.
These popsicles are made with coconut water, but if you don’t have any, you can substitute lemonade or your child’s favorite juice.
Fresh Raspberry and Blueberry Popsicles Recipe
Ingredients:
- Fresh blueberries
- Fresh raspberries
- Coconut water
Items needed:
- Popsicle molds
- Wooden Popsicle sticks
Directions:
1. Wash your blueberries and raspberries.
2. Place about six berries in the bottom of your ice pop molds.
3. Fill your molds halfway with coconut water.
4. Place a few more berries in the molds.
5. Fill the rest of the way up with your coconut water.
6. Top off with a few more berries.
7. Place a craft stick in each pop mold.
8. Place in the freezer for an hour and rearrange your craft sticks to make sure they are centered.
9. Freeze for an additional 4-5 hours or overnight.
10. To remove your pops, place the bottom of the mold under hot water for about 15 seconds and they will pull right out.
