Mini Apple Pie Bites

Mini Apple Pie Bites- These individual treats are a delicious way to enjoy apples this fall. Serve them as a dessert or toss one in your child's lunchbox.

Apples and cinnamon belong together in one of fall’s favorite desserts- Apple Pie. But you can make them something really special by topping the sweet, tender apples with walnuts that get deliciously toasted. Make it even better by creating little individual pies for your party or get together. I think everything looks and tastes better in mini form!

I love baking, but as hard as I have tried I just cannot create a good pie crust. I cheat a little bit and use a store bought crust and fill it with a delicious homemade mixture to create a tasty dessert. This recipe is easily adaptable to make just the 6 or you can double, triple, or quadruple the recipe to feed a crowd.  Pop one in your child’s lunchbox for a special treat. It’s way better than any store bought, cellophane wrapped goodie!

Mini Apple Pie Bites

Ingredients:

  • 3 medium sized apples
  • 3 T. walnuts, chopped
  • 2 T. butter, softened
  • 1/4 cup brown sugar, packed
  • 1/2 tsp. lemon juice
  • 3 T. flour
  • 1 tsp. apple pie spice (How to make Apple Pie Spice)
  • 1/8 tsp. salt

  1. Preheat oven to 350°
  2. Coat a 6 hole muffin tin with non stick spray.
  3. Unroll pie crust onto lightly floured surface, use a glass or biscuit cutter between 3 1/2″ to 4″ to cut out 6 pastry rounds. Press into prepared muffin tin to make pie crust base.Mini Apple Pie Bites pie crust
  4. Peel and dice apples into small bite-sized pieces.
  5. In a small bowl toss together the diced apples, chopped walnuts, flour, cinnamon, apple pie spice, lemon juice, salt, and butter.  Stir to combine all ingredients well.
  6. Spoon filling evenly among the 6 pie crusts.Mini Apple Pie Bites mixed filling
  7. Bake for 13-15 minutes until golden brown.
  8. Dress them up even more with a small spoon of vanilla ice cream, a dollop of whipped cream or a drizzle of caramel if desired.

Customize the pies to your taste by using your favorite nut instead of walnuts, or substituting raisins or cranberries in the same amount.

    Those little pies are SO cute! These sound so simple and delicious too. I like to use store-bought dough, too. Sometimes we’re just too short on time. I bet the addition of walnuts really finish these off. Yum!
