One of my favorite things about these gluten-free muffin recipes is that they work so well as freezer muffins. Make a double or triple batch, then store the muffins in freezer bags after they have cooled. You can grab a bag of muffins out of the freezer once a week to serve for snacks and breakfasts that everyone will enjoy.
