Well folks, this summer just got a little hotter for me. We just moved into a new house that is a bit older and has no air conditioning. Yeah, you heard me right – no AC. So I’ve been coming up with all sorts of ways to beat the heat. From lots of fans to cool lemon water chilling in the fridge – all the way to picking out a kiddie pool for the backyard for my son and I to play in. But, something that has been cooling me down this week is popsicles! There’s just something about a frozen popsicle that instantly makes you about ten degrees cooler – am I right?

The great thing about popsicles is that there are just SO many different kinds you can make right at home!  Just save this list of popsicle recipes and you’ll instantly have some great summertime snacks for those overly-warm days. On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
