Blackberry Sweet Tea Popsicles

Blackberry Sweet Tea Popsicles- If you enjoy cold glasses of sweet tea and fresh blackberries, you will love this popsicle recipe! Try them this summer!

 Blackberry Sweet Tea Popsicles

When the summer heat threatens to overwhelm you, go ahead and arm yourself with these Blackberry Sweet Tea Popsicles. This frosty treat is sure to make everyone happy. They are so easy to make you’ll wonder what’s taken you so long to jump aboard the popsicle bandwagon. Check out down below to see what you’ll need add these sub-zero babies to your ‘beat the heat’ arsenal.

Ingredients:

  • 2 cups of your favorite Sweet Tea
  • 1 cup of granulated sugar
  • 1 cup of water
  • 2 cups fresh blackberries, divided

Additional Equipment:  

  • Popsicle mold
  • fine mesh strainer
  • juicer

Blackberry Sweet Teasicles

Directions:

  1. Prepare your the blackberry simple syrup. Add one cup of granulated sugar and one cup of water to a sauce pot over medium-high heat. Add 1/2 cup of fresh, washed, and picked over blackberries. Using a muddler or a fork break berries apart to release juice. Bring mixture to a boil, then remove from heat. Cover with a lid and allow mixture to steep for ten minutes. Strain mixture through a fine mesh sieve into a Mason-style jar. Secure lid and refrigerate until the blackberry simple syrup is cool, about 20 – 30 minutes.
  2. Pour 1/2 blackberry simple syrup and 1/2 sweet tea into each popsicle mold and freeze for an hour.
  3. Add the remaining 1 1/2 cup of blackberries to a juicer. Add juice to one cup of sweet tea. Remove popsicle molds from the freezer and add the sweet tea and blackberry juice mixer to the fill-line of each mold.Blackberry Sweet Tea Popsicles- pouring in molds
  4. Return molds to the freezer for 1 – 2 hours or overnight.
  5. Remove the Blackberry Sweet Popsicles from molds and serve.
