Unicorn Food Cake and Ice Cream Parfait Recipe

A quick once over of the ingredient list and it is easy to understand the attraction to this Unicorn Food Cake and Ice Cream Parfait. I mean, there’s so much to love about this colorful treat. For one, there’s yellow cake with candy sprinkles baked right in! That’s impressive, or at least I think so. And if cake wasn’t enough we’ve also tossed in  a couple of big dollops of French vanilla ice cream and candy toppings.  If you need to take a seat I completely get it.

 Ingredients:

  • 1 box yellow cake mix with candy sprinkles
  • 1 1/2 cup vanilla bean ice cream
  • strawberry syrup
  • miniature assorted colored marshmallows
  • assorted candy sprinkles
  • multi-colored jelly beans
  • whipped cream

Directions:

  1. Follow the directions on the yellow cake box, you can bake the cake a day or more ahead of time if you desire.
  2. Use your serving glass to cut out a circular piece of cake. Place one piece at the bottom of your serving glass. Cake and Ice Cream Parfait- Use glass to cut out cake
  3. Add vanilla ice cream (or whatever flavor ice cream you desire).
  4. Squirt on a bit of strawberry syrup, and toss in a few mini marshmallow, candy sprinkles, or jelly beans.
  5. Repeat the process, layering more ice cream, cake, and sweet treats.
  6. Top with with whipped cream, sprinkles, and more candy if desired.
  7. Serve

So, basically this really a sorta kinda a cake meets ice cream lasagna. It definitely fits the lasagna formula of layering good stuff on top of each other. First layer is cake, second layer is strawberry syrup, then vanilla ice cream then more fruity syrup, and so one and so forth. Eventually you get to the top and swirl on whip cream and dot it all with an assortment of candy sprinkles, colorful mini-marshmallows, and jelly beans.

Little unicorns will go wild for this Unicorn Food Cake and Ice Cream Parfait. It's a fun and easy recipe that layers cake, ice cream, and colorful candies.

Welcome. I'm Alea!

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
