Recipes Using Alfredo Sauce

March 27, 2012 by Alea Milham 1 Comment

Today I am sharing my Pasta Alfredo Casserole recipe at $5 Dinners. My daughter requested that I create this casserole because it would be eaier to transport in her lunches and eat at school than my other recipes with Alfredo sauce. Here are a few other delicious recipes that use alfredo sauce: Chicken Alfredo Pizza withRead More

Black Bean Salad with Tomatoes and Avocado

March 26, 2012 by Alea Milham 8 Comments

This is my fast and easy “oops I forgot to start dinner and now my starving family is looking at me expectantly” recipe. This salad comes together in under 10 minutes. The combination of beans and avocado make it quite filling despite the fact that it is a meatless dish. It is also a very flexibleRead More

Spaghetti Squash Pie Recipe

Spaghetti Squash Pie

March 20, 2012 by Alea Milham 7 Comments

This dish was inspired by a recipe in one of my favorite “kitchen” books, Deceptively Delicious by Jessica Seinfeld. I wanted to take a gluten free twist on her original dish. My first attempt to substitute actual spaghetti with a spaghetti squash, I ended up with a pie plate full of soup.  After a coupleRead More

This Mixed Berry Pie Recipe a delicious way to celebrate Pi Day (March 14, or 3/14), or any day you want to make a tasty fruit-filled pie.   We have a few math geeks living at our house. And when I say math geeks, I mean serious math geeks. So geeky that one member ofRead More

Menu Plan – Week of March 11

March 12, 2012 by Alea Milham Leave a Comment

I had one of those weeks, last weeks. The ones where everything breaks. My computer, my phone, the heater, and the oven. Except for the heater, everything is pretty essential and hard to live without. 🙂 I had to revise my menu, which had included a lot of oven baked dishes because it is aRead More

Lemon Basil Catfish

March 8, 2012 by Alea Milham 2 Comments

After last week’s success with Pecan Crusted Ruffy, I was excited to try another fish recipe experiment on my family. I decided to try a “sweet” marinade, while sticking to some of the traditional fish flavors. They were completely not expecting a sweet note with fish, so I caught them all by surprise. However, they allRead More

Dairy Free mashed Potatoes with Cauliflower and Celeriac

Savory Mashed Potatoes with Cauliflower and Celeriac

March 6, 2012 by Alea Milham 5 Comments

The idea of combining mashed potatoes with cauliflower has been around for a while, but I recently discovered a recipe on City Share which combined celeriac with potatoes to create Celeriac and Potato Mash. Celeriac is actually the root of a celery plant and has a mild celery flavor. I thought it would make aRead More

Cooking Tip: Checking Doneness without Marring Meat

March 5, 2012 by Alea Milham 2 Comments

Somebody broke my meat thermometer. I’m not going to name names, but I think it is probably the same person who took one of my bean jars, emptied the beans and covered it with construction paper to make a “state glass jar”. That same little person had been eyeing my thermometer to use in aRead More

Repurpose Leftover Salad Dressing as a Marinade

March 5, 2012 by Alea Milham 2 Comments

I like to make homemade salad dressings. I usually prepare a specific dressing to go with a certain salad. Once we’ve finished the salad, the dressing tends to sit in the fridge, neglected and forgotten. To avoid food waste, I’ve started using my salad dressings as marinades. I do this a couple different ways: IfRead More

An easy recipe for Mocha Fudge Cake. Make it in a bundt cake pan and top it with Mocha Fudge glaze. Uses coffee instead of milk or water for the liquid.

Mocha Fudge Bundt Cake with Mocha Fudge Glaze

March 4, 2012 by Alea Milham 5 Comments

Occasionally, when life is really busy, or just plain crazy, I cheat and doctor a cake mix rather than cook from scratch. I would rather have company over and serve them an easy dessert, rather than not entertain at all. When the cake mix brand that I like goes on sale, I will buy aRead More

Recovering from an Epic Cookie Failure

March 3, 2012 by Alea Milham 10 Comments

My first attempt to make Chai Spiced Meringue Cookies didn’t work out. At all. I tried to modify my Flourless Chocolate Walnut Cookies and had disastrous results. I am just glad I used a jelly roll pan to bake the cookies on or I would have ended up with the batter overflowing on to theRead More

Pecan Crusted Roughy

March 1, 2012 by Alea Milham 5 Comments

I’m afraid that every week I am going to have a “this is what I really made” post. When I posted my menu plan, I  intended to make Herb Crusted Cod, but I didn’t check my pantry very well before I made my menu plan.  Then when I set out to make dinner I discoveredRead More

Dairy-Free “Butter Cream” Frosting

February 29, 2012 by Alea Milham 13 Comments

I have avoided making butter cream frosting since my oldest son’s reaction to dairy became more intense last year. For many years, he was fine as long as he took an enzyme pill before eating. Instead of getting better as he has gotten older, his reaction has gotten worse and he decided to adopt aRead More

Mixed Berry Crumble

February 27, 2012 by Alea Milham 6 Comments

My husband could not resist bringing home berries when he did some grocery shopping for me. He actually called me from the store and asked if I would make him a dessert if he brought home berries. He wanted to make sure that I wouldn’t see them while putting away groceries and start making plansRead More

Sauteed Potatoes with Italian Seasonings

February 16, 2012 by Alea Milham Leave a Comment

I deviated from my menu plan on the first day. I didn’t change it too much, but I decided the flavors of Green Beans with Garlic and Garlic and Rosemary Red Potatoes were too similar, so I decided to change up the potatoes a bit. I wanted the flavor of the potatoes to compliment theRead More

February 15, 2012 by Alea Milham 10 Comments

This Honey Mustard Salad Dressing Recipe uses Dijon mustard, white vinegar, oil, and honey. This Honey Mustard Vinaigrette is a simple salad dressing to make. Welcome. I'm Alea!

On Premeditated Leftovers I share simple recipes made with whole foods, practical shopping tips, time saving techniques, and meal planning strategies. I also share tips for minimizing food waste, so more of the food that is purchased ends up on the table.

While volunteering as a budget counselor, I realized that food is the element of most people’s budgets where they have the greatest control. I set out to develop low-cost recipes from scratch to prove it’s possible to create delicious meals on a limited budget. Eating well while spending less is about more than just creating recipes using inexpensive ingredients; it’s about creatively combining ingredients so you don’t feel deprived and are inspired to stick to your budget.
